Beef ribs should be cooked low & slow.  Most commonly, they are cooked with moist heat in a savoury-sweet marinade, but they are also amazing in a smoker or Southern-style barbeque.  The results are a fork-tender meat with some of the greatest flavour of any cut of beef.

Our beef cattle are naturally raised without antibiotics or synthetic hormones, on free-range organic pasture.  We dry-age each side of beef for a full three weeks, then our artisanal butcher hand cuts each piece with individual care.  We think the results give you the very best cuts of meat you can find anywhere.

Brisket Roast

The brisket has long muscle fibres that become soft and tender when cooked low and slow.  As long as that simple guideline is followed, you will get a falling-apart tender roast with fabulous flavour.

The best way to cook a brisket is with moist heat, by either braising, pot-roasting or simmering in a liquid.  A pot roast should be cooked until fork-tender or well done.  It makes its own delicious sauce while cooking and can be made a day ahead, re-warming nicely in its own gravy.

You can place your brisket in a crock pot or dutch oven while it’s still frozen, with about 1/4 cup of water and an onion quartered into chunks.  Put it on low heat in the morning, and by dinner time it will be ready to eat.  For a complete meal, throw in some whole or halved potatoes, diced carrots, and your other favourite vegetables and herbs with the frozen roast.

To serve, slice across the fibre of the meat.

Tenderloin Steak

Tenderloin steaks are the most tender cut of beef available.Tenderloin steak is also commonly known as fillet mignon or chateaubriand, and is THE most tender cut of steak.  These fillets are cut from the large end of the tenderloin.

Tenderloin steaks have very little marbling, and for that reason they are best marinated, cooked hot and fast, and served rare to medium after resting for 10 minutes or so.

This is also the classic cut for making beef stroganoff or steak tartare.  It is considered to be the absolute best, most premium cut of beef.

The t-bone steak is a prized steak also known as Porterhouse.This is one of the more prized steaks, also known as the Porterhouse.  If the bone (which is in the shape of a “T”) was cut away, you would be left with the tenderloin (or fillet mignon) and the Striploin steak.  So the T-bone is one of the premier cuts of beef.  Keeping the “t-bone” in the steak also improves the flavour of this exquisite cut.

Pork Butt Roast

Certified organic, naturally pasture raised heritage pork butt roast, available from our local family farmCertified organic pork from Whispering MeadowsThe pork butt roast, despite the name, comes from the shoulder of the hog, above the shoulder blade.  It is a well marbled roast, but with somewhat less tender meat, since it comes from one of the harder-working muscle groups of the pig.  When cooked low and slow, the tougher collagen connective tissues break down into gelatin, resulting in a succulent, falling-apart, melt-in-your-mouth meat.

The fat content of pork butt makes it well suited to any kind of slow cooking — smoking, braising, slow-roasting, Instant Pot, or slow cooker.  With a long cooking time at a low temperature, you’ll get a very tender meat that you can enjoy as-is, or use for any recipe that calls for pulled pork.

This steak is extremely well marbled and is absolutely melt-in-your-mouth delicious.  It’s our own personal preference for the best steak in existence — especially when it comes from our hand-raised, naturally grassfed, free-range, dry-aged Angus beef cattle.

The rib steak is often called a rib-eye steak or a prime rib steak.  It is the same cut as the prime rib roast, just divided into steaks rather than being kept as a whole roast.

Skirt Steak

Order online direct from our farm!The skirt steak is traditionally used for fajita meat.  Similar to the flank steak, it is a very lean cut with long muscle fibres that need to be cut thinly across the grain. 

The skirt is considered a slightly better cut than flank because it takes up the flavour of a marinade better and gives a more tender finished beef.  It is not only excellent in fajitas, but also in sandwiches or as a salad topping.

Marinate for at least a half hour, or overnight if possible.  Cook 3-4 minutes per side and cut thinly across the grain.

Order online direct from our farm!Oxtail makes incredibly delicious soups and stews, with melt-in-your-mouth meat and a unique rich flavour.  At one time, oxtail was considered a “cheap” offcut, but now it is recognized as a gourmet specialty product that is generally hard to find.  Especially from a naturally-raised and grass-fed source!

Slow-cook your oxtail in a stew or marinade, or roast it for several hours, to produce a rich and flavourful meat that literally falls apart.  Oxtail is actually quite similar to beef cheeks in many respects but takes just a bit more work to remove the extra fat and bones after cooking.

Flank Steak

Order online direct from our farm!This popular cut is technically not a steak, but has become commonly accepted as one.  Flank steak is cut from the belly muscle of the animal, which makes it a very lean cut of meat with little marbling.  It is tender and delicious when cut thinly across the grain.

Marinate for a minimum of a half-hour, grill for 3 to 4 minutes per side, let rest for 5-10 minutes, and slice very thin across the long fibres of the meat.

Serve with your favourite rice or potato dish, or wrapped in flat bread stuffed with your favourite cheese & roasted veggies, or on top of a salad.

Pasture Raised Pork

Naturally pasture raised heritage pork, available by the quarter hog direct from our local family farmCertified organic pork from Whispering MeadowsOur certified organic, pasture-raised hogs are a heritage variety known as Tamworth, which is one of the oldest pig breeds and is closely related to wild boar.  Many people consider it to have the most flavour of any pork variety.

We raise them free-range on organic pastures, with the same care and kindness we lavish on all of our animals, and with zero antibiotics, steroids, or synthetic hormones.  The meat is processed by hand at a regulated, government inspected and family-owned local butcher shop.

You can choose a whole, half or quarter hog — they are priced at $5.60 per pound, dressed weight, for a quarter hog.  And you can order in larger quantities for a discounted price.

  • Quarter hog estimated dressed weight: 55 lbs.  $5.60/lb.
     
  • Half hog estimated dressed weight: 110 lbs.  $5.25/lb – save 6.3%.
     
  • Whole hog estimated dressed weight: 220 lbs.  $4.95/lb – save 11.6%.

Whispering Meadows local natural pasture-raised pork chopsDressed weight means the weight of the entire side when it is initially hung — before dry-aging and butchering.  This is the industry-standard method of pricing sides of meat.

The total weight of your pork cuts will be approximately 65% of the dressed weight, after butchering into individual cuts and removal of unnecessary bone and fat.  That means your final pork cuts work out to an average of $8.62/lb, or $1.90/100g, if you order a quarter hog.

Half-hog orders work out to around $8.08/lb ($1.78/100g), and whole hogs about $7.62/lb ($1.68/100g).

Shipping is free to Southern Ontario for orders that contain a whole hog.

Although each order differs a little in overall weight, the average quarter hog gives you between 35 and 40 pounds of pork.  The meat ships to you frozen in a convenient 12”×12”×12” box.  One quarter hog fills about 1/4 of an average fridge freezer.

The deposit paid now secures your order. The balance is due at the time of pickup or delivery, based on the weight of pork in your order.
