Beef heart is a lean organ meat that is very high in iron, riboflavin, selenium and vitamin B12.  It is also high in niacin, phosphorus and zinc.

Heart is similar in taste and texture to venison, although without the gamey flavour.  It is delicious in stews, and can also be served on its own, fried with onions and vegetables, or stuffed and baked.

Heart meat is best either sliced into strips and grilled rare to medium-rare, like tenderloin, and left to rest before serving.  Or it can be slow-cooked with moist heat for 2+ hours, and it will develop a firm yet tender texture.

Beef hearts also make an excellent pet food, not only for dogs and cats but also for many fish, as it gives them good coloration and quick growth.  We think it’s important to only feed your pets on all-natural, healthy beef hearts that are free of antibiotics and synthetic hormones — especially when you are giving them a raw diet.

The chuck ribeye is similar to rib steak, with excellent marbling, and great texture and flavour.  While it may not be considered to be quite as good a cut as the rib steak, it offers outstanding value for its price.  It is sometimes known as a Delmonico steak, named after a NYC steakhouse, although there is a lot of debate about exactly which cut should carry the name.

Chuck ribeye steak should be well seasoned, and grilled quickly on high heat, the same way as rib steak — 4 to 5 minutes per side for medium rare.  Just be careful not to overcook it.  You’ll want to keep it below medium done, or it will get tougher than you’d like.  You can also reverse sear it, bringing it to an internal temperature of 130°F before drying and searing it at the highest possible heat.  When served medium-rare, it makes a succulent and delicious steak option.

Beef tongue is a thick, juicy and fulfilling meat.  It can be served as a main dish, or as a gourmet appetizer, thinly sliced on crackers.  It is also excellent in sandwiches, tacos and burritos.

To cook tongue, simmer whole in water or stock for ~3 hours — and keep the stock for soup or stew.  Then peel off the tongue’s outer membranes, slice 3/4” — 1” thick, and grill at high heat until the surface turns a deep mahogany colour.  Serve with your choice of garnishes, such as caramelized onions & thyme, chimichurri, or salsa verde.

Tongue is also a great addition to a raw diet for your pets.  Both dogs and cats can benefit from an occasional meal of tongue in addition to the other meats in their diet.
