Our certified organic pork chops are cut from the loin of our heritage pasture-raised Tamworth hogs.
Our hogs are naturally-raised without antibiotics or synthetic hormones, on free-range pasture with organically-grown feed. Their meat is hung to dry-age for three weeks before cutting by hand into individual cuts.
We give you the choice of keeping the rib bone on your pork chops, or having it removed. The bone imparts extra flavour, and moderates the heat from cooking, so it is the favourite of many professional chefs. Boneless pork chops are the more common choice, and make a quick and easy cooking option.
Which option you choose comes down to personal preference and how you intend to use it. Because there is slightly less meat per package on the bone-in option, we give you a small discount from boneless.
