Order online direct from our farm!The tomahawk steak is a special-order cut, available only in 10-pound boxes.  This is a very large, high-end steak, cut from the same part of the rib primal as the ribeye steak and the prime rib roast.  Each steak is 2” thick, averages 2.5 pounds, and includes a 5” section of rib bone.

Because this is a very thick, bone-in steak, it is not for the amateur griller.  We recommend using the reverse sear method to prepare your tomahawk steaks — ideally medium-rare, and never past medium.  With a little care, this steak will let you present a truly jaw-dropping meal, with unbelievably succulent beef flavour and tenderness.

Besides being one of the most prized cuts of beef, these tomahawk steaks come from our free-range grassfed & grain-finished Angus cattle — raised on organic pasture, and never given steroids, hormones, or antibiotics.  We dry-age each side of beef for a full three weeks, to give it maximum flavour and tenderness, before it is artisanally hand-cut by our local family-run butchers.

Tenderloin Steak

Tenderloin steaks are the most tender cut of beef available.Tenderloin steak is also commonly known as fillet mignon or chateaubriand, and is THE most tender cut of steak.  These fillets are cut from the large end of the tenderloin.

Tenderloin steaks have very little marbling, and for that reason they are best marinated, cooked hot and fast, and served rare to medium after resting for 10 minutes or so.

This is also the classic cut for making beef stroganoff or steak tartare.  It is considered to be the absolute best, most premium cut of beef.

Approximately 10oz (0.27kg) per package of two tenderloin medallions.  Available in grass-fed or grain-finished beef.

T-bone Steak

The t-bone steak is a prized steak also known as Porterhouse.This is one of the more prized steaks, also known as the Porterhouse.  If the bone (which is in the shape of a “T”) was cut away, you would be left with the tenderloin (or fillet mignon) and the Striploin steak.  So the T-bone is one of the premier cuts of beef.  Keeping the “t-bone” in the steak also improves the flavour of this exquisite cut.

One T-bone steak per package, cut 1-1/4” thick.  Approximately 16oz (454g) each.

Rib Steak

The rib-eye steak is very well marbled, extremely juicy and delicious!

This steak is extremely well marbled and is absolutely melt-in-your-mouth delicious.  It’s our own personal preference for the best steak in existence — especially when it comes from our hand-raised, naturally grassfed, free-range, dry-aged Angus beef cattle.

The rib steak is often called a rib-eye steak or a prime rib steak.  It is the same cut as the prime rib roast, just divided into steaks rather than being kept as a whole roast.

One rib steak per package, cut 1-1/4” thick.  Approximately 14oz (397g) each.

Skirt Steak

Order online direct from our farm!The skirt steak is traditionally used for fajita meat.  Similar to the flank steak, it is a very lean cut with long muscle fibres that need to be cut thinly across the grain. 

The skirt is considered a slightly better cut than flank because it takes up the flavour of a marinade better and gives a more tender finished beef.  It is not only excellent in fajitas, but also in sandwiches or as a salad topping.

Marinate for at least a half hour, or overnight if possible.  Cook 3-4 minutes per side and cut thinly across the grain.

New York Strip Steak (Strip Loin)

Sirloin Steak

Order online direct from our farm!Sirloin is the classic restaurant steak cut.  While it may not top the charts for tenderness, it is packed with beefy flavour.  It is sometimes referred to as Top Sirloin or Tri-Tip Steak.  It is great barbecued, or it can be broiled in the oven.

Flank Steak

Order online direct from our farm!This popular cut is technically not a steak, but has become commonly accepted as one.  Flank steak is cut from the belly muscle of the animal, which makes it a very lean cut of meat with little marbling.  It is tender and delicious when cut thinly across the grain.

Marinate for a minimum of a half-hour, grill for 3 to 4 minutes per side, let rest for 5-10 minutes, and slice very thin across the long fibres of the meat.

Serve with your favourite rice or potato dish, or wrapped in flat bread stuffed with your favourite cheese & roasted veggies, or on top of a salad.

Petite Tender

Order online direct from our farm!The petite tender is also known as the shoulder tender, the teres major or the bistro filet.  It is a relatively thin strip of muscle from the shoulder, and is unusually fine-grained, with a lot of the same characteristics as tenderloin.  In fact, many people consider the petite tender to be nearly as good of a cut as the tenderloin, and at a lower price-point.

You can use the petite tender as a direct substitute for tenderloin in most recipes.  It is usually marinated, and cooked hot and fast.  It can also be used in beef stroganoff or beef tartare.

One whole petite tender per package, about 10oz.

Chuck Ribeye Steak

Order online direct from our farm!The chuck ribeye is similar to rib steak, with excellent marbling, and great texture and flavour.  While it may not be considered to be quite as good a cut as the rib steak, it offers outstanding value for its price.  It is sometimes known as a Delmonico steak, named after a NYC steakhouse, although there is a lot of debate about exactly which cut should carry the name.

Chuck ribeye steak should be well seasoned, and grilled quickly on high heat, the same way as rib steak — 4 to 5 minutes per side for medium rare.  Just be careful not to overcook it.  You’ll want to keep it below medium done, or it will get tougher than you’d like.  You can also reverse sear it, bringing it to an internal temperature of 130°F before drying and searing it at the highest possible heat.  When served medium-rare, it makes a succulent and delicious steak option.

Denver Steak

Order online direct from our farm!Denver steak is a relatively new cut of beef that is quickly becoming a popular choice.  It is a smaller steak, cut from just below the shoulder blade.  It’s ranked as the fourth most tender cut — it has outstanding marbling, which gives it exceptional texture and flavour.

Denver steak is best served medium-rare.  You can reverse sear it to an internal temperature of 130°F pre-sear, then rest and dry it before quickly searing on all sides at high heat.  Or grill it for 3 to 4 minutes per side.  Once you try a denver steak, we suspect that it will become one of your favourite meat options.
