Denver steak is a relatively new cut of beef that is quickly becoming a popular choice. It is a smaller steak, cut from just below the shoulder blade. It’s ranked as the fourth most tender cut — it has outstanding marbling, which gives it exceptional texture and flavour.
Denver steak is best served medium-rare. You can reverse sear it to an internal temperature of 130°F pre-sear, then rest and dry it before quickly searing on all sides at high heat. Or grill it for 3 to 4 minutes per side. Once you try a denver steak, we suspect that it will become one of your favourite meat options.
