Blue Cheese Beef Fettuccine

Here Is One To Inspire: Steak Strips On Fettuccine With Blue Cheese!

Serves 4 to 6

  • 2 — 3 Steaks: Sirloin, sirloin tip, rib, eye of round, or blade
  • Fresh Ground pepper
  • 1 cup 250 mL Plain yogurt
  • 1/2 cup 125 mL Crumbled sharp blue cheese
  • Fettuccine noodles

Roll steaks in freshly ground pepper, covering all sides well. Grill on BBQ or broil in oven to medium rare (approximately 3 minutes per side in preheated BBQ or oven). Let stand for 5 minutes. Slice across the grain into thin strips. Cook fettuccine noodles as per package directions, timed to be finished same time as steak. In food processor or blender, combine yogurt and blue cheese; mix well. Do not heat. To serve, arrange noodles on warmed plates. Top with steak and spoon cold sauce over top. Serve with fresh tomatoes & cucumber slivers.
