The pork butt roast, despite the name, comes from the shoulder of the hog, above the shoulder blade. It is a well marbled roast, that comes from one of the harder-working muscle groups of the pig. When cooked low and slow, the collagen connective tissues break down into gelatin, resulting in a succulent, falling-apart, melt-in-your-mouth meat.
The fat content of pork butt makes it well suited to any kind of slow cooking — smoking, braising, slow-roasting, Instant Pot, or slow cooker. With a long cooking time at a low temperature, you’ll get a very tender meat that you can enjoy as-is, or use for any recipe that calls for pulled pork.
