Pork chops are a relatively lean cut, and should be grilled or pan-seared at high temperature for best results, being careful to keep them tender by giving them a quick sear on all sides. For an extra gourmet presentation, they can be frenched, by scraping back the meat and fat from the rib bone, as shown in our photo above.

Bone-In or Boneless
We give you the choice of keeping the rib bone on your pork chops, or having it removed. The bone imparts extra flavour, and moderates the heat from cooking, so it is the favourite of many professional chefs. Boneless pork chops are the more common choice, and make a quick and easy cooking option.
Which option you choose comes down to personal preference and how you intend to use it. Because there is slightly less meat per package on the bone-in option, we give you a small discount from boneless.
