Pork rinds, also known as crackling or chicharones, are an incredibly tasty, crunchy, keto snack food. They’re extremely popular in Latin America, and just as enjoyable here in Canada. It can be hard to find high-quality pork skin, especially from naturally-raised organic sources. We sell our certified organic pork skins in 1-pound packages.
It’s very easy to make your own pork rinds, though it’s a process that does take some time. Here’s our recommended gourmet method:
- Rub the pork skins with 1 part salt and 2 parts baking soda, and refrigerate for at least one hour, or ideally overnight. The salt and baking soda help tenderize the proteins in the skin.
- Boil the skins until they are very tender, but not falling apart. If you have a pressure cooker or Instant Pot, this will take around 20 minutes. If simmering on a stove-top, it may take up to 2 hours.
- Lay the skin, fat side down, on a baking tray, and bake at 300°F (150°C) until dry and lightly browned, around 4 hours. Then break them up into strips or bite-size pieces.
- With a generous amount of oil heated to 375-400°F (190-205°C) in a pan, drop in a small number of pieces at a time. Within just a few seconds, they will puff up and be done. Lay them out on a paper towel, and sprinkle with finishing salt. You can optionally also add smoked paprika, and spritz with a little lemon or lime juice to really make the flavour pop.
