For a large gathering, there’s no other dining centrepiece more lavish and eyecatching than a suckling pig. And it’s not just a feast for the eyes — the rich aromas of roasting pork that fill the air will make mouths water for miles around.
This is a special order, so please allow up to three weeks for us to get it to you. Your suckling pig will come dressed, gutted, and ready to roast, and will weigh approximately 100 lbs (45.4 kg).
A suckling pig should be roasted low and slow, using a probe thermometer to periodically check the internal temperature all through the meat. We highly recommend a reverse sear, roasting at 160°F (70°C) for around 10 hours, until the meat reaches 140°F (60°C) at its deepest point. This should be followed by a rest at room temperature for at least 20 minutes. Then a final sear at very high temperature to crisp the skin before presentation.
To order your suckling pig, just put down a $95 deposit now, and we’ll be in touch to arrange your delivery date. Your balance will be due at the time of delivery, based on the actual weight of your pig, at $4.65/lb dressed weight, minus deposit paid. The average final balance is around $370.
