This is a special order, so please allow up to three weeks for us to get it to you.  Your roasting pig will come dressed, gutted, and ready to cook, and will weigh approximately 100 lbs (45 kg).

Your whole pig should be roasted low and slow, using a probe thermometer to periodically check the internal temperature all through the meat.  We highly recommend a reverse sear, roasting at 160°F (70°C) for around 10 hours, until the meat reaches 140°F (60°C) at its deepest point.  This should be followed by a rest at room temperature for 20 minutes to an hour, covered.  Then a final sear at very high temperature to crisp the skin before presentation.

To order your whole roasting pig, just put down a $95 deposit now, and we’ll be in touch to arrange your delivery date.  Your balance will be due at the time of delivery, based on the actual weight of your pig, at $4.65/lb dressed weight, minus deposit paid.  The average final balance is around $370.

Pork Butt Roast

Certified organic, naturally pasture raised heritage pork butt roast, available from our local family farmCertified organic pork from Whispering MeadowsThe pork butt roast, despite the name, comes from the shoulder of the hog, above the shoulder blade.  It is a well marbled roast, but with somewhat less tender meat, since it comes from one of the harder-working muscle groups of the pig.  When cooked low and slow, the tougher collagen connective tissues break down into gelatin, resulting in a succulent, falling-apart, melt-in-your-mouth meat.

The fat content of pork butt makes it well suited to any kind of slow cooking — smoking, braising, slow-roasting, Instant Pot, or slow cooker.  With a long cooking time at a low temperature, you’ll get a very tender meat that you can enjoy as-is, or use for any recipe that calls for pulled pork.

This is a bone-in pork butt roast, cut from our certified organic, pasture-raised heritage pork.  Nothing else added.  Order your butt roast direct from the farm, and we’ll deliver it frozen right to your door.  Approximately 3.5 pounds (1.59kg) each.

Pork Shoulder Roast

The shoulder roast is a great choice when you want a firmer meat that can give you pork strips, for recipes like ramen, tacos, or pozole (a delicious Mexican hominy & pork stew).

Pork Hock

Naturally pasture raised heritage ham hock, raised free range and certified organicCertified organic ham hock from Whispering MeadowsHock, or knuckle, comes from the calf of the pig.  It contains a lot of collagen, which means that it needs to be cooked low & slow in moist heat – either sous-vide, in a braising pan, or in a slow-cooker – for at least 3 hours.

When you do that, the collagen breaks down into gelatine, and you end up with an unctuous meat that is falling-apart tender, and melt-in-your-mouth delicious.

Pork hock makes for a highly cost-effective meal, with incredibly flavourful meat.  It’s one of the best values in pork.

Our pork hocks are approximately 2 lbs (0.91 kg) each.  They are bone-in, and skin off.  Delivered frozen to your door.
