Brisket Roast

The brisket has long muscle fibres that become soft and tender when cooked low and slow.  As long as that simple guideline is followed, you will get a falling-apart tender roast with fabulous flavour.

The best way to cook a brisket is with moist heat, by either braising, pot-roasting or simmering in a liquid.  A pot roast should be cooked until fork-tender or well done.  It makes its own delicious sauce while cooking and can be made a day ahead, re-warming nicely in its own gravy.

You can place your brisket in a crock pot or dutch oven while it’s still frozen, with about 1/4 cup of water and an onion quartered into chunks.  Put it on low heat in the morning, and by dinner time it will be ready to eat.  For a complete meal, throw in some whole or halved potatoes, diced carrots, and your other favourite vegetables and herbs with the frozen roast.

Optionally, you can sear your brisket before serving, by first drying it thoroughly, then placing it in the hottest possible oven until it darkens to a deep mahogany colour, with maximum flavour.

To serve, slice across the fibre of the meat.

Beef ribs should be cooked low & slow.  Most commonly, they are cooked with moist heat in a savoury-sweet marinade, but they are also amazing in a smoker or Southern-style barbeque.  The results are a fork-tender meat with some of the greatest flavour of any cut of beef.

Our beef cattle are naturally raised without antibiotics or synthetic hormones, on free-range organic pasture.  We dry-age each side of beef for a full three weeks, then our artisanal butcher hand cuts each piece with individual care.  We think the results give you the very best cuts of meat you can find anywhere.

Pork Butt Roast

Certified organic, naturally pasture raised heritage pork butt roast, available from our local family farmCertified organic pork from Whispering MeadowsThe pork butt roast, despite the name, comes from the shoulder of the hog, above the shoulder blade.  It is a well marbled roast, that comes from one of the harder-working muscle groups of the pig.  When cooked low and slow, the collagen connective tissues break down into gelatin, resulting in a succulent, falling-apart, melt-in-your-mouth meat.

The fat content of pork butt makes it well suited to any kind of slow cooking — smoking, braising, slow-roasting, Instant Pot, or slow cooker.  With a long cooking time at a low temperature, you’ll get a very tender meat that you can enjoy as-is, or use for any recipe that calls for pulled pork.
