Osso Buco – Beef Shank

 

Our Osso Buco beef shanks are cross-cut from the lower leg of our pasture-raised, hormone-free cattle. Each slice contains a marrow-filled bone that melts into the braising liquid, creating a luxurious sauce and deeply satisfying flavor. Slow-cook these shanks for a classic Italian Osso Buco or any rich, hearty braise.

Cooking Notes

Sear the shanks until golden, then gently braise with wine, stock, and aromatic vegetables for 2½–4 hours. Finish with a traditional gremolata—a bright mix of parsley, garlic, and lemon zest—to complement the rich sauce. Serve over saffron risotto, creamy polenta, or mashed potatoes.
